Stuffed Avocado

Stuffed avocados taste great on a hot summer afternoon - especially when shared with friends as we chat from the comfort of my deck. Add some music and a few cold drinks, and we are in heaven.

While I give the basic recipe below, the world is the limit for variations. Add in cilantro. Use hot salsa instead. Use black beans instead of roasted corn. Add a dash of dressing…

Depends. How many do you want to eat?

Ingredients:

Musical ingredient: Kany García (I especially like her tunes: “Estigma de Amor” and “Hoy Ya Me Voy.”)

3 Avocados

 Salsa, chunky (mild or hot)

1 can (14.75 oz) roasted corn kernels

1 wedge lime

Recommended drink: Dos Equis Ambar Especial

Directions:

1.     Cut avocado in half lengthwise. Remove seed.  Using a spoon, scoop out about half the avocado leaving a ¼ inch layer against the inside skin. Save the scooped avocado in a small bowl.

2.     Chop the avocado in the bowl into small pieces. Add an equal volume of salsa and roasted corn kernels. Add the juice from a wedge of lime. Mix. 

3.     Stuff avocado halves with this mixture.

4.     Toast your friends.

5.     Eat the stuffed avocados.

6.     Repeat.
